  • For perfectly warmed tortillas, you can grill them briefly. After removing the chicken, clean the grill grates if necessary, then place the flour or corn tortillas directly on the dry grill. Grill for about 2 minutes per side, or until they are warm, pliable, and show light char marks. As they are warmed, transfer them to a plate and immediately wrap them in aluminum foil to keep them soft and warm until you are ready to serve the tacos.
  • For Serving: Once rested, chop the cooked buffalo chicken into bite-sized, manageable pieces. To assemble your delicious tacos, place the chopped chicken onto the warmed tortillas.     Using Chicken Breasts Instead of Tenders

    While chicken tenders offer convenient, uniform portions, you can certainly use chicken breasts for this recipe. For best results and to ensure even cooking, either pound the chicken breasts uniformly to about 1/2-inch thickness using a meat mallet or the bottom of a heavy pan, or slice them into even 2-inch wide strips before marinating. This preparation ensures they cook through consistently and quickly.

    Other Ways to Cook Buffalo Chicken

    Baked: Place the marinated chicken tenders (or prepared chicken breasts) on a lightly greased baking sheet. Bake in a preheated oven at 350ºF (175°C) for 15-20 minutes, flipping the chicken halfway through. Continue baking until the chicken registers an internal temperature of 165ºF (74°C).

    Shredded Stovetop: Place unmarinated chicken tenders or breasts in a saucepan and cover completely with water or chicken broth. Bring the liquid to a boil, then reduce the heat to a simmer and cook for approximately 20 minutes, or until the chicken is thoroughly cooked and easily shreddable. Remove the chicken, shred it using two forks, and then toss with 1/4 cup of the buffalo marinade (make sure it’s the portion without the added honey). Reserve the remaining honey-added marinade for serving as a sauce.

    Shredded Instant Pot: Add unmarinated chicken tenders or breasts and 1 cup of water or chicken broth to the Instant Pot. Securely seal the lid and cook on HIGH pressure for 10 minutes. Perform a quick release of the pressure, then carefully remove the chicken and shred it with two forks. Toss the shredded chicken with 1/4 cup of the buffalo marinade (the portion without honey), reserving the rest for serving.
