Classic Gluten-Free Bread Stuffing with Apples

Ingredients

 

  • 1 recipe gluten-free bread (2 pound loaf),, see recipe notes for using store-bought
  • 9 ½ tablespoons butter,, divided
  • 3 celery stalks,, diced
  • 1 medium onion,, diced
  • cup fresh parsley,, minced
  • 1 ½ teaspoon dried sage, (2 tablespoon fresh minced)
  • ¾ teaspoon dried thyme, (1 tablespoon fresh minced)
  • ¾ teaspoon dried marjoram, (1 tablespoon fresh minced)
  • 1 ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 large eggs
  • 1 apple,, peeled and diced
  • 3 cups gluten-free chicken broth

Instructions

 

  • Begin by slicing the gluten-free bread into 1/2-inch cubes and evenly distribute them between two baking sheets. Allow the bread cubes to air dry at room temperature for 24 hours. Alternatively, for a quicker method, toast the bread cubes in a 225ºF (107°C) oven for 30-40 minutes, stirring them gently every 10 minutes to ensure even drying.
  • Liberally grease a 9×13-inch baking dish with ½ tablespoon of butter. Preheat your oven to 350°F (175°C).
  • Melt 6 tablespoons of butter in a large skillet over medium heat. Add the diced celery and onions to the skillet. Cook and stir continuously for 8-10 minutes, or until the vegetables have softened and become translucent.
  • Stir in the fresh parsley, dried sage, dried thyme, dried marjoram, salt, and pepper. Continue to cook and stir for just 1 minute longer to allow the herbs to become fragrant, then remove the skillet from the heat.
  • In a large mixing bowl, whisk the three large eggs until well combined. Add the dried bread cubes, the diced apple, and the cooked butter-herb-vegetable mixture to the bowl. Pour the gluten-free chicken broth over all the ingredients. Gently stir everything together until well combined and the bread cubes have begun to absorb the liquid.
  • Spread the stuffing mixture evenly into the prepared baking dish. Melt the remaining 3 tablespoons of butter and drizzle it over the top of the stuffing. Cover the dish securely with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and continue to bake for an additional 20-25 minutes, or until the top of the stuffing is golden brown and crispy.

Adjusting for a Smaller Portion: Half Recipe

To prepare a smaller portion of stuffing, simply halve all the ingredients. You can use one loaf of store-bought gluten-free bread or half of a homemade loaf (freezing the remainder for future use). Bake the reduced recipe in an 8×8-inch baking dish for proportional results.

 

Make-Ahead and Freezing Instructions

This stuffing can be assembled up to 24 hours in advance. Cover it securely and refrigerate until you’re ready to bake. Be aware that assembling ahead of time will result in the liquids soaking into the bread cubes more thoroughly, yielding a softer overall consistency.

For the best results when preparing ahead, especially if refrigerating overnight, it’s crucial to thoroughly dry out the bread first. Let the bread cubes sit out at room temperature for 2-3 days, or toast them in a 225ºF (107°C) oven for 30-40 minutes, stirring occasionally. The cubes should be firm and dry, similar to the consistency of traditional stuffing mixes like Pepperidge Farm or Stove Top. This ensures they maintain their shape and texture even after absorbing moisture overnight.

To freeze baked stuffing, follow the recipe directions completely and allow the stuffing to cool entirely. Wrap it tightly with plastic wrap, then cover it with aluminum foil. It can be frozen for up to 1 month. Thaw the frozen stuffing in the refrigerator overnight before reheating.

 

Reheating Leftovers

If reheating thawed frozen stuffing, remove the plastic wrap, recover with foil, and let it stand at room temperature for 30 minutes. Bake in a 325°F (160°C) oven for 15 minutes.
