Authentic Copycat Skyline Cincinnati Chili: A Culinary Journey

For those unfamiliar with Cincinnati Chili, particularly the iconic Midwest restaurant chain, Skyline, prepare for a delightful surprise. This chili isn’t your average Tex-Mex bowl; it boasts a distinctive, Mediterranean-inspired spice blend. Imagine the warm, aromatic notes of cinnamon, a hint of allspice, pungent ground cloves, earthy cumin, and a touch of chili powder, all harmonizing to create a flavor profile reminiscent of dishes like moussaka or pastitsio. It’s a sweet and savory, deeply spiced creation that stands out from any other chili you’ve ever tasted.

While the exotic spice blend might pique your curiosity, the serving suggestions often raise eyebrows. Traditionally, this chili is ladled over a bed of spaghetti or hot dogs, then crowned with an almost alarming amount of finely shredded cheddar cheese. Guests might approach with skepticism, but much like our award-winning Buffalo Chicken Chili, it’s almost always love at first bite. The unique combination of flavors and textures creates an addictively comforting meal that defies conventional chili definitions.

Having perfected this recipe over countless iterations, I’ve developed three convenient methods to suit any schedule. Short on time doesn’t mean sacrificing flavor, though. My preferred method for infusing maximum flavor in minimal time is the Instant Pot. The pressure cooking process works wonders, creating a rich, deeply flavored chili quickly and efficiently.

When you need a truly effortless, hands-off dinner, the slow cooker method is a game-changer. Simply combine the ingredients, stir, and let it simmer until dinner time. This method is particularly excellent for achieving the authentic Skyline chili texture – incredibly soft, fine, and fragrant, unlike the chunkier consistency of traditional chili.

For those who enjoy a more hands-on approach and precise control over their cooking, the stovetop method is ideal. It allows for easy spice adjustments and consistency management. You can simmer it for an hour for a quicker meal or let it gently bubble away for a longer period to deepen the flavors. While it simmers, you’ll have plenty of time to grate mountains of cheese, boil your spaghetti, and prepare any additional toppings.

We grew up eating Skyline chili! So we know Cincinnati chili! Made this recipe for my husband for Valentine’s. We loved it! Has it over spaghetti noodles with lots of cheese… we loved it. Tonight we did chili cheese dogs with onions on top!!! So good!!! Thanks for the recipe!

Gather Your Ingredients: Let’s Cook Together!

all the ingredients to make Cincinnati Chili laid out in front of slow cooker.
Assemble all your ingredients and spices. Cincinnati Chili uses a variety of spices, so it’s best to set them out first to make sure none are missed.

While this recipe features a generous list of ingredients, rest assured they are all readily available, simple, and affordable. The result is a complex flavor that belies its straightforward preparation. First and foremost, I highly recommend using lean ground beef. Given the longer cooking times involved in most methods, lean beef ensures your chili tenderizes beautifully without introducing excessive grease that would need to be drained later. This contributes to the signature smooth texture of Cincinnati Chili.

To truly achieve that classic Skyline chili taste and melt-in-your-mouth texture, a crucial tip is to avoid browning the meat before adding it to your slow cooker or pressure cooker. Unlike traditional chili or meat sauces where browning creates a “toothier” texture, omitting this step results in an incredibly soft, finely disintegrated beef that blends seamlessly into the sauce. It’s a subtle but significant detail that makes all the difference.

Beyond that, the preparation is incredibly simple: it’s largely a “dump and cook” affair. If you’re using an Instant Pot, remember one key modification: hold off on adding the tomato paste until the very end. Adding it too early can cause it to settle at the bottom and potentially trigger a “burn” warning, interrupting your cooking process. Stirring it in after pressure cooking allows it to thicken the chili perfectly without any issues.

I love how not browning the meat first makes this recipe even better. Who doesn’t love shortcuts?

Expert Tips and Tricks for Perfect Cincinnati Chili

  • **Choose Lean Ground Beef:** This is crucial, especially for slow cooker preparations. Leaner meat minimizes excess grease, leading to a cleaner, more authentic chili. For Instant Pot or stovetop methods, draining excess fat is easier if you opt for a slightly higher fat content, but lean is always preferred for this recipe’s specific texture.
  • **Skip the Browning (for authenticity):** While browning meat usually adds flavor, for true Cincinnati Chili texture, skip this step. Adding raw ground beef directly allows it to break down into a wonderfully fine, soft consistency that is characteristic of Skyline Chili.
  • **Achieving the Right Consistency:** Cincinnati Chili is typically thinner than a traditional chili, more akin to a rich meat sauce. Don’t expect a thick, chunky texture; its liquid nature is part of its charm, perfectly coating spaghetti noodles.
  • **Thickening Your Chili:** If you find your chili too thin for your preference, you have a couple of easy options. You can stir in an additional tablespoon or two of tomato paste, or simply simmer the chili uncovered for a longer period to allow some of the liquid to evaporate and the sauce to reduce.
  • **Make Ahead & Freeze:** This recipe is fantastic for meal prep! Once cooked, allow the chili to cool completely. Then, portion it into freezer-safe ziplock bags or containers. It freezes beautifully and makes for a quick and delicious meal on busy weeknights. Just thaw and reheat gently on the stovetop or in the microwave. Consider doubling the recipe to ensure you always have some on hand!

Serve It Like A Pro! The “Ways” of Cincinnati Chili

While commonly referred to as “chili,” this unique dish is more accurately described as a flavorful, finely textured meat sauce. Its versatility goes beyond just a bowl. Typically, it’s served over a generous mound of pasta, but don’t limit yourself! It can also elevate baked potatoes, transform into delicious chili hot dogs, be incorporated into quesadillas for a spicy twist, or spooned over crispy french fries for an indulgent treat.

When ordering at a traditional Cincinnati chili parlor, the serving style and toppings are famously specified by a “ways” system. This system not only streamlines ordering but also highlights the traditional combinations that make this dish so iconic. Beyond the “ways,” hot sauce and oyster crackers are almost always served alongside for an extra kick and satisfying crunch.

Here’s a breakdown of the classic Cincinnati “ways”:

  • Two-way: This is the simplest form, featuring a hearty serving of spaghetti topped generously with Cincinnati chili. It’s a great starting point for appreciating the chili’s core flavor.
  • Three-way: Building on the two-way, this popular choice adds a generous layer of finely shredded cheddar cheese over the chili and spaghetti. The cheese melts into the warm chili, creating a creamy, savory experience.
  • Four-way onion: For those who enjoy a bit of sharpness and crunch, the four-way onion includes spaghetti, chili, a mound of cheese, and fresh, diced onions. The onions provide a refreshing counterpoint to the rich chili.
  • Four-way bean: If you prefer a heartier, more traditional chili feel, the four-way bean incorporates kidney beans in addition to the spaghetti, chili, and cheese. Note that the beans are typically served alongside or on top, not mixed into the chili itself.
  • Five-way: The ultimate Cincinnati Chili experience! This comprehensive serving combines spaghetti, chili, cheese, diced onions, and kidney beans, offering a complete symphony of flavors and textures in one satisfying dish.

  • 1 teaspoon ground cumin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground allspice

  • 1/2 teaspoon pepper
  • 6 ounce (170.1 g) can tomato paste
  • For Serving: cooked spaghetti, hot dogs, or baked potatoes
  • Optional Toppings: lots of shredded cheddar cheese (highly recommended!), chopped onion, and kidney beans

Equipment

  • Slow Cooker
  • Pressure Cooker (Instant Pot)

Instructions

Slow Cooker Method

  1. In a slow cooker, combine all ingredients except the ground beef. Add the ground beef, breaking up the meat with a spoon as you add it. Stir well to combine all ingredients evenly.
  2. Cook on LOW for 8 hours or on HIGH for 6 hours. Serve your rich and aromatic Cincinnati Chili over cooked spaghetti or hot dogs, topped with your desired additions, especially plenty of shredded cheddar cheese!

Instant Pot Method

  1. Using the SAUTÉ function on your Instant Pot, cook the ground beef and diced onion together for about 8 minutes, or until the beef is lightly browned. For a more authentic, softer chili texture, you can alternatively skip browning the beef and add it raw in the next step. Add the chopped garlic and sauté for an additional 30 seconds until fragrant. Press CANCEL to turn off the sauté function.
  2. Add all remaining ingredients to the Instant Pot, EXCEPT for the tomato paste. Stir everything thoroughly to combine. Secure the lid and ensure the valve is sealed.
  3. Cook on HIGH PRESSURE for 20 minutes. Once cooking is complete, perform a quick release of the pressure. After the valve drops, carefully remove the lid and stir in the tomato paste. If you desire a thicker chili, simmer on the SAUTÉ setting for 5-10 minutes, stirring occasionally, until it reaches your preferred consistency. Serve immediately over cooked spaghetti or hot dogs with your favorite toppings.

Stovetop Method

  1. In a large pot or Dutch oven over medium-high heat, sauté the ground beef and diced onion together until the beef is browned, which usually takes about 5-7 minutes. Alternatively, to achieve a softer, more authentic Cincinnati Chili texture, you can skip browning the beef first and simply add it raw with the other ingredients in the next step. Add the chopped garlic to the pot and sauté for an additional 30 seconds until fragrant.
  2. Add all remaining ingredients to the pot and stir well to combine. Bring the mixture to a boil, then reduce the heat to a simmer. Let it simmer UNCOVERED for at least 1 hour, or until the chili has reduced and thickened to your desired consistency. Serve hot over cooked spaghetti or hot dogs with all your favorite toppings.
