  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon honey, for sauce

For the Salads (per 4 servings):

  • 8 cups chopped romaine, washed
  • 6 slices bacon, cooked and chopped
  • 4 stalks celery, chopped
  • 1 red pepper, sliced
  • ½ red onion, sliced thin
  • ½ cup cilantro, chopped
  • ½ cup blue cheese crumbles
  • Ranch or blue cheese dressing, for serving

  3. Heat grill to medium-high heat and grease the grill grate. Grill chicken undisturbed for 5 minutes on one side, or until char marks appear and the chicken releases easily from the grill. Flip and cook a few minutes more on the other side or until the internal temperature reaches 160°F (71°C). Remove chicken and let rest while salads are assembled.
