  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 14 ounces smoked kielbasa sausage, sliced and halved

Dairy-Free Modification

For a dairy-free version, I recommend replacing the heavy cream with a plant-based alternative that has a high fat content, such as full-fat coconut milk. This will help maintain the creamy texture.

Storing and Reheating

The soup will naturally thicken upon standing as the rice absorbs more liquid. To avoid this, cook the starch (rice, potatoes, or pasta) separately and add it to individual serving bowls. Store the soup and starch in separate airtight containers.

If storing with the rice already added, you will need to add extra liquid when reheating. Use water, broth, or more cream to reach your desired consistency. Always adjust the seasoning to taste after adding additional liquid.
