Ingredients

Cream Filling:

  • 1 ½ cups (370.88 g) 2% or whole milk
  • 2 (2) egg yolks
  • ⅓ cup (66.67 g) granulated sugar
  • 2 tablespoons (2 tbsp.) cornstarch
  • ⅛ teaspoon (0.13 tsp.) salt
  • 2 teaspoon (2 tsp.) vanilla

Cake:

  • ½ cup (102.5 g) shortening
  • ¾ cup (90 g) powdered sugar
  • 4 (4) large eggs, separated and room temperature
  • 3 tablespoons (3 tbsp.) milk
  • 1 cup (136 g) all purpose flour or gluten free all purpose flour, (I recommend Cup4Cup gluten free flour)
  • 1 teaspoon (1 tsp.) baking powder
  • ¼ teaspoon (0.25 tsp.) salt
  • ½ cup (60 g) powdered sugar (for meringue)
  • ½ cup (100 g) granulated sugar (for meringue)
  • ½ cup (71.5 g) sliced almonds
  • 2 tablespoons (2 tbsp.) granulated sugar (for topping)

Instructions

Custard Filling

  1. Whisk the milk, 2 egg yolks, sugar, cornstarch, and salt together in a medium saucepan. Cook and stir over medium heat, stirring constantly until the mixture thickens and boils. Continue to boil and stir for 1 minute to ensure proper thickening.
  2. Remove the saucepan from the heat and stir in the vanilla extract. Place a piece of plastic wrap directly onto the surface of the custard, pressing it down to prevent a film from forming. Set aside to cool completely to room temperature, then transfer to the refrigerator to chill thoroughly. The custard can be made 1-2 days ahead and stored in an airtight container in the fridge.

Cake and Meringue

  1. Preheat oven to 325ºF (160ºC). Lightly spray two 8-inch cake pans with cooking spray. Line the bottom of each pan with parchment paper cut to size and spray the paper as well. Set aside.
  2. In a large bowl, beat together the shortening, ¾ cup powdered sugar, egg yolks, and milk until well combined and creamy, scraping down the bowl as needed. Add the all-purpose flour (or gluten-free all-purpose flour), baking powder, and salt. Beat on medium speed for 1 minute, scraping down the bowl to ensure a smooth batter.
  3. Divide the thick batter evenly between the prepared cake pans. You may need to use an offset spatula or your lightly greased fingers to press the batter down evenly across the bottom of the pans. Set aside.
  4. In another clean, dry bowl (preferably a stand mixer bowl), beat the reserved egg whites until they are foamy. Gradually beat in ½ cup powdered sugar and ½ cup granulated sugar, adding a couple of tablespoons at a time. Continue beating until the meringue is stiff and beautifully glossy, holding firm peaks.
  5. Carefully spread half of the meringue mixture evenly over the cake batter in each pan. On top of the meringue, sprinkle each pan with half of the sliced almonds and then 1 tablespoon of granulated sugar. This creates the magical crunchy topping.
  6. Bake for 35-40 minutes, or until the meringue is set and lightly golden, and a wooden skewer or toothpick inserted into the cake portion (not just the meringue) comes out clean. The meringue will appear done before the cake layer underneath, so test the cake for doneness. Cool the cake layers completely in their pans on a wire rack.

Assembly

  1. Once completely cooled, use a thin knife or small offset spatula to carefully loosen the edges of each cake layer from the pan.
  2. Gently use a small spatula and your hand to lift one cake layer out of its pan. Once fully released, carefully peel off the parchment paper from the bottom. Place this first layer, meringue side up, onto your serving platter. Evenly spread the thoroughly cooled and chilled custard filling on top. Gently release the second cake layer and place it on top of the custard, also meringue side up. Refrigerate the assembled torte for at least 1 hour before serving to allow the custard to set and prevent sliding when slicing. Use a serrated knife with a gentle sawing motion to cut neat slices. Refrigerate any leftovers.
